Fresh Cranberry Relish - A Low Fat Meat Topping Alternative


                                                                                   Cranberry Relish


Ingredients:
1.5 Cup Fresh Cranberries
1 Navel Orange
2 peeled apples
¼ cup – 1 cup sugar

Directions:
Place all the ingredients into a food processor and pulse until you reach a slightly ground  “chunky” consistency.  Try adding a little lemon to the apples to avoid browning and add a nice zing. Add the sugar to your preference.  Less sugar will provide a more tart product versus sweet.  Instead of sugar you may find adding additional fruit can help cut the cranberry bite. **I tried this recipe with 1/4C of sugar and this was just enough for me.  Try the lowest amount and add as needed.**

Nutrition of 1 1/8 Cup: 97 kcal, .2g fat, .4g protein, 25g CHO, 1.3mg Na, 20g Sugar
Compare to…1 cup of turkey and giblet gravy: 120kcal, 5g fat, 12g CHO, 1.37 gram Na, 6g protein, 11g sugar
