10 Minute: Spicy Shrimp Stir Fry

My friend asked me to make him something healthy with minimal cooking and preparation.  This brought me to the idea of using frozen pre-cooked shrimp because it cooks quickly while being low in fat and high in protein (shellfish is naturally higher in sodium).  Then, staying with frozen items, this recipe uses frozen mixed vegetables, portioned quick cooking rice, and a spicy szechuan sauce.





1 Package Frozen
 Vegetables
                                      4 Ingredients:
1 Package Frozen
Pre-Cooked Shrimp
(Large Shrimp)
1 Cup Minute Rice
1/4C San-J Szechuan Sauce (Meijers)
Directions:
Lightly spray a large pan with nonstick spray.  Turn the heat on medium high.  Open the frozen vegetables and shrimp then pour the items into the pan.  Defrost the items by placing a lid over the pan to keep moisture and heat. Occasionally stir the mixture for even heating.  Once the items are heated through remove the lid to allow excess water to evaporate then pour the sauce over top.  Cook both cups of rice in the microwave for 1 minute or as directed in the product directions. Separate all items into 4 servings. Enjoy!
